This easy-to-make cucumber gazpacho is a refreshing summer alternative to your usual soup recipes
iCook products used:
5-piece knife set
Cutting board
Ingredients:
2 large cucumbers, peeled, deseeded and roughly chopped
500g Greek yoghurt
1 tbsp lemon juice
3 sprigs of fresh dill or mint
1 stick pack of Nutrilite™ Fibre Powder
Optional: 1 clove of garlic, peeled
Preparation Method:
Place the cucumber in a blender with the yoghurt, dill or mint, and lemon juice. If adding garlic, be sure to grate it.
Add one stick pack of Nutrilite™ Fibre Powder.
Blend until smooth.
Season with salt and pepper.
Chill for at least an hour before eating.
Tip:
Add a splash of olive oil for extra richness.
