100 g chocolate 75%
3 eggs, size M or L (very fresh and at room temperature)
20 g sugar
20 ml hot espresso coffee

Preparation method:
Melt the chocolate in bain-marie, using the iCook 4 litre stock pot with the double boiler inset pan, stirring occasionally until entirely melted. When melted, add the espresso coffee and stir until fully blended. Set aside and leave to cool slightly.
Separate eggs in two of the iCook mixing bowls.
Stir the sugar into the egg yolk until sugar is dissolved. Then stir the egg yolk and sugar mixture into the melted chocolate and espresso coffee mixture – make sure it is not too hot to prevent the egg yolk from becoming flaky.
Whisk the egg white until stiff and set aside. Let the mixture cook down further, add the stiff egg white and fold in gently.
Now transfer into dessert bowls and refrigerate for at least 2 hours. Bon appétit!
