Eggplant rolls with herbs and cheese cream

Now that you know the benefits of the iCook 7-Ply Wok, why not try out our new finger licking appetizer recipe to entertain your friends.

Serves 4

Ingredients:

  1. 2 medium-sized aubergines

  2. AMWAY™ da Carapelli Extra Virgin Olive Oil

  3. 100g gouda, grated

  4. 150g cottage cheese

  5. 4g garlic, chopped

  6. 40g walnuts, chopped

  7. 40g coriander, basil or parsley, chopped

  8. 3g paprika and salt and pepper to taste

Method:

  1. Wash aubergines and cut lengthwise into thin slices using the iCook Chef Knife. Salt slices and let stand for 5 minutes to sweat. Rinse and dry.

  2. Pour oil into the iCook 7-Ply Wok and heat. Fry aubergine slices until they have a brown crust. Remove and lay on a paper towel to remove excess oil.

  3. Filling: mix Gouda and cottage cheese in an iCook Mixing Bowl and add garlic, herbs, walnuts. Add paprika. Salt and pepper to taste.

  4. Spoon filling onto aubergine slices and roll up. Sprinkle with herbs.
